The De-evolution of story

I don't even know if de-evolution is a word, but whatever I'm using it.

Something I've noticed over the years is that as a story progresses, it generally tends to hit a climax somewhere, then just drop horribly.
This usually happens more in manga and light novels, since they run for longer than anime does, but it just seems really weird to me.
I know that the reason for this...
