While you guys are on HxH what do I do watch the old version then go to 2011 version where it would've continued? Or Just stick with new version throughout?

the new version is just the sped up old version, so just watch the new cause the old is about 70 episodes and 3 different ova's. If you want to notice a change then watch both

Depends on what you want, if you want to see how hisoka has changed watch both

they both start from the beginning of the story so doesn't really matter

Stick with the new version, the old one has it's charm but the new one is closer to Togashi's story. Afterwards you can always revisit the old series to watch the filler and see the characters in a different scenario, this is what I plan to do.
