The speed boost makes my 7 attack points seem like 700 attack points if I time right

No, you only have 5 attack points, you have a speed rating of 7, with higher than average speed you get more attacks off in a shorter period of time, and you evade attacks more often, however, this only affects your Damage Per Second.
NOT your attack points in general.
